Ginataang Kambing (Goat Curry)

My very easy and simple goat curry recipe! Ingredients: 1Kg of goat meat ( you can use any type of meat that you prefer or just vegestables ) 400ml coconut milk 200ml broth 2tbsp of fish sauce Water ( enough to cover the meat ) 1 white onion 4 gloves of minced garlic 1 tbsp of minced ginger 3 chopped lady finger chillies 2 chopped tomatoes 1 tbsp curry powder 1 tbsp maldon sea salt 1 tsp cumin powder 1 tsp nutmeg powder 1 tsp crushed black peppercorn a big handful of spinach 200 grams string beans 1 large aubergine ( chopped) Instructions: 1. In a casserole pan saute the onion, garlic, chillies and tomatoes cook until softened, then add your goat meat ( For the oil i use the excess fat from the goat meat) . Stir all together and cover it, check occasionally until slightly brown. 2. Add broth and water enough to cover the meat. Slow cook it for 2-3 hour on low heat. Check occasionally if you need to add more water, till the meat is tender. 3. When the meat is ready add coconut milk, fish sauce, spices and seasonings. Bring to a simmer, skimming any scum that may float on top. 4.Lower heat, cover, and simmer for about 15-25 minutes. 5. Add spring onions and string beans and cook for about 3 to 5 minutes or until tender yet crisp. Then add your pre-cooked aubergine and spinach. Stir to combine and continue to cook for about 2 to 3 minutes or when the vegetables cooked. 6. Add more seasonings if needed Serve hot with mix rice quinoa! Hope you enjoy watching!
