3 large butterfish washed and cut into pieces
Add 1 tsp salt
Add 1 tsp black pepper
Add 2 tbsp green seasoning (thyme, garlic, green onions and pepper)
Marinate for at least 10-15 minutes
In a pan with hot oil
Slightly dust the fish and fry until golden brown
Stew sauce preparation
In a pan with 1 tsp oil
Add 1 onion finely chopped
Add 3 green onions finely chopped
Add 3 heaping tbsp of tomato sauce
Add 2 mari wirrie peppers
Add 1 tsp salt
Add 1 tsp black pepper
Add 2 -3 cups of warm water
Add 1/2 tsp Chinese spice
Cover and leave to cook for 10 minutes
Add 1 grated carrot
Add fried fish
Cook on low to medium heat for 3-6 minutes
Add spinach (optional)
Garnish with cilantro and green onions
Enjoy with roti or rice
