Carrot Foogath was a dish I came across when I stayed at a lovely plantation in Mollem, close to the Doodhsagar falls. It was served as a side with rice and another veg dish. I remember seeing it and thinking, ‘who cooks carrot as the hero of a dish?’. When I tasted it I realised why. The subtle sweetness of carrot is beautifully preserved and you won’t lose the tender, juicy bite either. It is held and presented in the warm, earthy flavours contributed by the mustard and the curry leaves. The coconut garnish at the end is another flavour booster.
